Τhe Fine Selection series is a testament to Artemis’s expertise in Santorini vineyards and gentle vinification methods. This collection unveils the purest expression of Santorini’s indigenous grape varieties of Assyrtiko and Mavrotragano, featuring noble wines such as 34, Pyritis, Mystirio, and Mavrotragano. Mystirio, the first skin-contact Assyrtiko ever made in Santorini, adds a unique dimension to the hidden depths of this intricate grape.

Origin of grapes
Over 100 years old vines from five of the most distinguished villages: Pyrgos, Megalochori, Exo Gonia, Akrotiri and Fira.
Vinification
Partial pre-fermentation maceration. Only free run juice is used. 80% ferments in stainless steel tanks and 20% in old barrels, concrete and clay vessels. Ageing on the lees for a minimum of twelve months.
Description
Stone fruits, tea and mineral finish. Creaminess balances bright and taut acidity. High concentration and fine complexity.
Best served
Decant before serving at 10-12°C. Pairs ideally with wild caught fish, oysters and chicken or turkey infused with aromatic herbs.

Origin of grapes
Three selected vineyards of over 120 years old vines in Pyrgos and Megalochori.
Vinification
Following a minimalistic approach, the goal is to let the wine express the terroir of these three magnificent vineyards. Stainless steel tank fermentation and ageing for over 12 months with frequent lees stirring. Post bottling, the wine receives four months of cellaring prior to release.
Description
Gentle, mineral nose with ripe stone fruit. Voluptuous mouthfeel with elegantly integrated acidity. High complexity with finesse and long, mineral finish.
Best served
Decant before serving at 11-13°C to give its complex fruit the chance to open up. Enjoy with rich dishes like salmon carpaccio, seafood risotto, lamb fricassée and stuffed poultry.

Origin of grapes
A single vineyard of 150 years old vines in Pyrgos, applying the principles of organic farming.
Vinification
Fermentation with indigenous yeasts using skin contact, exactly like in red wine vinification. Maceration for several weeks and ageing on the lees for 12 months. Unfined, unfiltered with minimum sulfite addition at bottling.
Description
A savory expression of Assyrtiko with this delicate skin contact wine. Herbal notes of chamomile, peppermint, black tea and spices of cardamom and coriander. Structured and generous mouthfeel with firm tannins balanced by the richness and the volume of the wine. Persistent finish with salinity and spicy hints.
Best served
At 14-16°C accompanies a large variety of cuisines such as traditional fish soup of Santorini, sweet and sour dishes, and white meat with savory or spicy sauces.

Origin of grapes
Two selected 20 years old vineyards in Exo Gonia and Kamari. Vines are trellised and pruned in double Guyot training system in order to achieve perfect ripeness.
Vinification
Twenty four hour pre-fermentation cold maceration followed by fermentation in stainless steel tanks in controlled temperature. Maturation period lasts three to four weeks. The wine ages in French oak barrels and in stainless steel tank for 14 months.
Description
Intense nose with black fruit notes, white pepper and aromatic herbs. Elegant with fine tannins and persistent finish.
Best served
Decant before serving at 16-18°C. Pairs perfectly with aged cheese and cured meat, a prime-steak or dishes with meat sauce. Explore pairings with fish or grilled fresh tuna.
Ageing potential
6-8 years.
